This is a great time of the year and it’s important to start planning weekly meals and grocery shopping based on some of the great deals you can find in your local grocery store and fresh markets. There is an abundance of fresh fruits and vegetables that are in season right now.

For the months of March through May, here’s a simple list of veggies that are in season.

  • Artichokes
  • Asparagus
  • Brocolli
  • Collard Greens
  • Corn
  • Fennel
  • Green beans
  • Peas
  • Spinach

Spring-Healthy-Recipes

For your seasonal fruit, you have:

  • Bananas
  • Mangos
  • Apricots
  • Honey Dew Melon
  • Oranges
  • Grapefruit
  • Pineapple
  • Strawberries

There are some recipes that are very simple as well as super tasty that use these seasonal fruits and veggies.  Using simple recipes can keep you in control of your weight loss goals.

Spring-Vegetables

Easy Parmesan Asparagus

  • 1 bunch asparagus
  • ½ cup fresh shaved parmesan
  • I Can’t Believe it’s Not Butter Spray
  • ¼ cup water
  • Fresh cracked Black Pepper

Snap asparagus at its bending point. (take asparagus as if it were a pencil in your hand, bend it gently and it will snap it’s root off on its own)

In a microwave-safe dish, add water, layer asparagus spears, sprinkle with pepper and top with shaved parmesan

Microwave for 8 minutes on high

Remove from oven and spray with butter spray

Cover with plastic wrap and microwave an additional 3 minutes.

Bacon-Wrapped Artichoke Hearts

  • 2 cans of quartered artichoke hearts, in water
  • 6 slices of Turkey Bacon (can use traditional bacon if desired)
  • ½ cup BBQ sauce
  • Toothpicks

Drain artichoke hearts.

Slice each slice of bacon in half.

Wrap each quartered artichoke heart with the half-slice of bacon and secure with toothpick

Place in 9x13 casserole dish, drizzle with BBQ sauce

Bake at 350 degrees for 40 minutes

Enjoy!

This is great for Spring barbecues as the weather begins to warm up.

Easy Grilled Pineapple

  • 1 fresh Pineapple
  • ¼ cup Sugar-Free Maple Syrup
  • Apple-Pie Spice

In a small dish, combine maple syrup and 1 teaspoon apple pie spice.

Trim and core Pineapple

Slice into ½ - inch rings

Place pineapple rings on a cookie sheet and brush with maple syrup mixture

Place rings directly on the grill, syrup side down.

Brush the top of the rings with the remaining syrup mixture.  (This ensure pretty grill marks)

Turn after two minutes and grill for another two minutes.

Super tasty and great with grilled chicken or grilled pork.

Strawberry Mango Protein Shake

  • 1 cup strawberries (can be fresh or frozen)
  • 1 Mango, peeled and seeded
  • 1 banana
  • 1 scoop vanilla protein powder
  • ½ teaspoon cinnamon
  • 4-6 ice cubes
  • 6 oz cold water

Place all ingredients in a blender and blend until smooth.

If too thick, add more water until desired consistency.

This is a great drink to curb appetite as the protein factor keeps you full.
